2022 PONY

A complex but light-drinking red, full of bright red fruits and hints of oxidation from leaving the barrels un-topped, allowing a protective flor to grow above the wine. Chillable or drillable. It's a real dog and pony show but without any dogs. 

• 100% Merlot from Redesdale VIC

• 80% direct pressed to stainless

• 20% hand de-stemmed into DP juice

• Wild ferment

• Float for 2 weeks before being basket pressed to old french oak 

• Elevage in cave for 18 months without topping

• No sulphur or additives of any kind, at any stage

• No fining or filtering
